Serves: 4 pax




  • 1 cup basmati rice, rinsed
  • 1 TSP olive oil
  • 1 small white onion, diced
  • Pinch of salt, more to taste
  • 1 TSP finely grated fresh ginger (about a 1-inch nub of ginger)
  • 1 red bell pepper, sliced into thin 2-inch long strips
  • 1 yellow or green pepper, sliced into thin 2- inch long strip {you could add broccoli, pock choy and other english vegetables(approximation) to enhance taste.}
  • 2 TSP veg thai red curry paste
  • 1 can (250 ml) full-fat coconut milk
  • 1 1/2 tsp of brown sugar
  • 2 tsp soy sauce
  • 1 1/2 tsp rice vinegar
  • Garnishes/slides: handful of chopped fresh basil, optional red pepper flakes




  • To cook the rice, bring a large bowl of water to boil. Add the rinsed rice and continue boilling for 30 minutes, reducing heat to prevent overflow. Remove it from heat, drain the rice and put it back in the pot. Cover and let the rice rest for at least 10 minutes or longer, until you’re ready to serve. Just few seconds before serving, season the rice to taste with salt and fluff it with a fork to ensure this is not in lumps.
  • To make curry, warm the kadaai over medium heat. Once it’s hot enough, add a tablespoon of oil. Add the onion and a sprinkle of salt and cook until the onions has softened and is about to turn goldish about 5 minutes, stirring often. Add the ginger and cock until fragrant, about 30 seconds.
  • Add the bell peppers {and other vegetables if added} and cock until they are fork-tender, 3 – 5 more minutes. Then add the curry paste and cook, make sure to stirring often, for 2 minutes.
  • Add the coconut milk to the pan along with 3/4 cup water and 1 1/2 tsp sugar. Bring the mixture to a simmer over medium heat. Reduce heat level to maintain a gentle simmer and cook until the peppers {and other vegetables, if added} have softened to your taste, about 5 to 10 minutes.
  • Remove the curry from heat and seasons with rice vinegar and soy sauce. Add salt to taste. Divide the rice and curry into bowls and garnish with chopped basil {or red pepper flakes}.
