- 1 Litre milk
- 50 gms Butter
- 8-10 Basil Leaves
- 50 gms of Maida
- Salt to taste
- White Pepper to taste ( Black pepper can also be used instead, but would change the color of the white sauce)
- Oregano and chilli flakes to taste
- Boil the milk separately and keep aside.
- Heat butter in a pan. Melt it on low flame.
- Add maida to the pan, stirring it continuously till you achieve consistent thickness. Ensure that the color of the maida does not change. Stir continuously till the maida is well infused with the butter.
- Add milk to the pan and keep stirring continuously.
- Add basil leaves to the sauce. Keep stirring till you achieve thick consistency.
- Remove the basil leaves from the sauce.
- Add salt, white pepper to taste.
- Add oregano and chilli flakes for flavoring.
Note: This sauce can be used as base for vegetable augratin, lasagne and other range of continental dishes.
